Here is a delicious and healthy dessert that you can whip up in just 10 minutes! This Blueberry Lemon Parfait is the perfect combination of tangy lemon-flavored Greek yogurt, sweet and juicy blueberries, and the delightful crunch of graham crackers. It’s a treat that will satisfy your sweet tooth while keeping things light and refreshing.


The layered presentation makes it visually appealing and fun to eat. Kids will enjoy digging through the layers to discover the different textures and flavors.

Tips for the Perfect Parfait:

  • Freshness is Key: Use fresh, ripe blueberries for the best flavor and texture.

  • Make Ahead: These parfaits can be made ahead of time and stored in the fridge, making them a great option for meal prep.


Meal Pattern Contribution: 3/4 cup provides 1/2 cup fruit, 0.50 oz. eq. meat/meat alternate.

Blueberry Lemon Parfait Recipe

Servings: 8 (3/4 cup per serving)

Ingredients


  • Greek Yogurt, lemon flavor | 2 cups


  • Blueberries | 4 cups


  • Graham Cracker | ½ cup



Directions


  1. Rinse fresh blueberries thoroughly and pat dry.

  2. In a cup of choice, layer ¼ cup of yogurt, ½ cup of blueberries, and 1 tablespoon of crushed graham crackers.

  3. Serve cold or wrap each parfait and store in the refrigerator until ready to serve.

Note: Age group 1-5 years old.
